To most, lontong is a must-have during Hari Raya, a comforting coconut vegetable stew served with rice cakes. But for Mdm Sharifah, it’s a dish steeped in memory.
Steps

Blend the spice paste ingredients into paste then set aside.

Using a non-stick pan, heat 1 tsp oil on medium heat. Pan-fry the tempeh and taukwa until the surface becomes golden brown in colour (does not have to be fully cooked). Set aside.

Add the remaining oil to the pan. Add in the spice paste, lemongrass and blue ginger. Stir-fry for about 5 minutes until fragrant.

Add in the water and stir periodically until boiled.

Then add in the vegetables and simmer for 10 minutes.

Add in the coconut milk and low-fat milk and continue to simmer for 10 minutes or until the vegetables are soft.

Taste the lontong gravy, add in sugar and salt if preferred.

Add in the tempeh and taukwa and stir for another 1-2 minutes. Garnish with the optional ingredients if preferred.

Serve together with the rice cake.
