Clean and quarter the crabs, cracking the pincers to allow the flavour to penetrate.

To make the sauce: put all in the blender shallots, garlic, roasted balacan, chilli, ginger, black bean and blend it until become a smooth paste.

Heat the oil in the wok, pour 4 tbsp oil and add the sauce paste and cook over high heat until fragrant, about 1 to 2 minutes. Add the tomatoes, tomato sauce, chilli sauce, sesame oil, soy sauce, sugar, MSG, white pepper, chicken powder and water and mix well. The reduce the heat and simmer for 1 minutes.

Add the crabs to the wok and toss to coat with the sauce. Cover and cook for 5 minutes over high heat. Add the unsalted butter, cornstarch and egg and stir until the sauce thickens. Garnish with freshly spring onions and serve immediately.
