  1. 600 gmHakka noodles
  2. 400 gmmini boneless cubes Chicken
  3. 2-3 tbspOlive Oil
  4. 2-3Eggs
  5. 1 tspgrated Ginger
  6. 1 tspgrated Garlic
  7. 1 tspSalt
  8. 1 tspBlack Pepper powder
  9. 1/2 tspWhite Pepper powder
  10. 1/2 tspCayenne Or Paprika powder
  11. 1/2 tsproasted Cumin powder
  12. 1/2 tsproasted Coriander powder
  13. 1 tspheaped Curry powder
  14. 1 cupBean sprouts
  15. 2 cupsshredded Cabbage
  16. 1 cupjulienned Yellow Bell Pepper
  17. 1 cupjulienned Red Bell Pepper
  18. 1 cupjulienned Green Bell Pepper
  19. 3-4 tbspchopped Coriander Leaves
  20. 1 tbspLemon juice
  21. 3-4 tbspchopped Spring Onions
  22. FOR THE SAUCE -
  23. 2 tbspDark Soya sauce
  24. 1 tbspLight Soya sauce
  25. 1 tbspRed Chilli sauce
  26. 1 tspRice Vinegar
  27. 2 tbspCornflour
  28. 1 tspSesame oil
  29. 1/4 cupwater

Steps

30-35 minutes
  1. 1

    Boil hakka noodles as per the package instructions. Drain and set aside.

  2. 2

    Heat oil in a pan over medium high heat. Stir fry chicken until cooked through. Add all the powdered spices as mentioned. Cook until crisp and flavourful. Set aside until use.

    In the same pan, stir fry chopped onion, grated garlic, grated ginger and eggs. Add a little pepper. To this scrambled eggs, Add back the cooked chicken too. Next add bean sprouts and the sauce.

    Now add bell peppers, carrots and cabbage for about 4-5 minutes until the raw smell fades away. Finally stir in the noodles.

    Toss everything together until well combined with the sauce. Cook for about 3-4 minutes more. That's it. Garnish with spring onions. Serve it piping hot right away. Enjoy!
