Ingredients

3 servings
  • 1 headbroccoli
  • 1onion
  • 4 clovesgarlic
  • 1/2 teaspoonginger
  • 11-12almonds
  • 3 tablespoonscilantro with stems
  • Coconut milk or regular milk as needed (optional)
  • 1-2 teaspoonsolive oil
  • 1 tablespoonbutter
  • 1/2 teaspoonblack pepper powder
  • Salt to taste

    Wash the broccoli thoroughly and cut it into pieces.

    Prepare the remaining ingredients as shown. Soak the almonds in hot water, then peel and chop them once they soften.

    Heat olive oil in a pan. Sauté the chopped garlic and ginger.

    Add the onion and cook until it softens.

    In a separate pot, bring water to a boil and blanch the broccoli.

    Add the cilantro and its stems to the pot and cook. At this point, add the cooked onion, garlic, and ginger. After 3 to 4 minutes, turn off the heat.

    Strain and reserve the cooking water. Let the mixture cool, then blend it with the almonds in a blender or food processor.

    Heat a pan and melt the butter. Add the purée to the pan and bring it to a boil. Add coconut milk or regular milk as needed (optional). You can also use the reserved broccoli blanching water instead of milk.

    Add salt and black pepper to taste. Stir in finely chopped cilantro.
