📌Everyone in our family absolutely loves Mumbai-style Vada Pav. Today, while cherishing memories of my childhood spent with my parents, I have prepared Vada Pav with a fresh, new twist.
📌Ulta Vada Pav, or "inside-out" vada pav, is a popular Mumbai street food twist where the pav (bread) is stuffed with potato filling, dipped in besan (gram flour) batter, and deep-fried. It reverses the traditional method, creating a crispy exterior with the bread and chutneys sealed inside.
📌By altering the traditional method of making Vada Pav, I have created an 'Ulta Vada Pav'—and to add yet another fresh twist, I have served it on a stick. I have named this creation the 'Ulta Vada Pav Stick.'

📌By altering the traditional method of making Vada Pav, I have created an 'Ulta Vada Pav'—and to add yet another fresh twist, I have served it on a stick. I have named this creation the 'Ulta Vada Pav Stick.'

Boil the potatoes, peel them, and mash them. In a pan, heat some oil and prepare a tempering by adding mustard seeds, urad dal, a paste of garlic, ginger, and green chilies, asafoetida, curry leaves, cinnamon, cloves, whole coriander seeds, and fennel seeds.

Add the mashed potatoes and mix well. Add salt, turmeric, lemon juice, and powdered sugar, and mix again. Garnish with fresh coriander and mix the mixture thoroughly.

Trim the edges off all six slices of bread. Spread green chutney generously over three of the bread slices. Spread tamarind chutney generously over the remaining three slices. Spread the potato mixture evenly over the three slices topped with chutney. Place the remaining bread slices on top, pressing down gently.

Add gram flour and rice flour to a mixing bowl. Add asafoetida, salt, red chili powder, and baking soda; mix well, and add water as needed to prepare a batter.

Pour oil into a pan and place it over medium heat to warm up. Cut the bread slices filled with the potato mixture (Vada Pav) into four pieces. Arrange them into long sticks.

Thoroughly coat the *Ulta Vada Pav* sticks with the gram flour batter. Place them in hot oil to fry. Fry until they turn crispy and golden brown. Fry all the *Ulta Vada Pav* sticks in this manner.

Serve the Ulta Vada Pav with the dry red chili-garlic chutney and fried green chilies. Enjoy eating the piping hot Ulta Vada Pav bites.
