Ingredients

30 minutes
2 people
  • 200 gHalloumi
  • 4 tbspnolive oil
  • 70 gbutton mushroom.. Halved
  • Halfeach of red, yellow and orange bell pepper... Diced
  • 4padron peppers.... Sliced in half lengthways and deseeded
  • 1carrot...... Vichy sliced
  • 1courgette.... Sliced
  • 1medium red onion.... Diced
  • 3garlic clove...... Peeled and crushed
  • Salt and pepper
  • Handfulfresh basil.... Keep a sprig for garnish and chop the rest
  • 1 cupvegetable stock
  • 400 gchopped tomatoes (can)
  • 1 tablespoontomato puree

Steps

30 minutes

    Heat the oil in a suitable pan (I used my wok)

  2. 2

    Add the mushrooms and stir fry for 1 minute

  3. 3

    Add the remaining dry vegetables plus the garlic, stir fry for 3-4 minutes.

  4. 4

    Add can of tomatoes and tomato puree, stir to coat all ingredients. Add stock and bring to a boil. Add salt and pepper to taste.

  5. 5

    Transfer to an ovenproof casserole dish and place the sliced halloumi on the top, brush with a little olive oil to help browning.

  6. 6

    Bake in an oven (I used my air fryer 190 degrees for 15-20 minutes) keep checking so the Halloumi doesn't burn

  7. 7

    Garnish with the basil sprig and serve.
