Capsicum fried rice / Tricolor rice

It is colorful and loaded with nutrients from capsicums and carrots. Also it provides a way to sneak in ginger, garlic and black pepper to keep the monsoon virus at bay :-)

Wash basmati rice 2-3 times and place it in a pressure cooker with 1 cup of water. Add a few drops of oil and little salt. Pressure cook for 2 whistles. Switch off and let it sit for 5 minutes. Then gently release the steam by lifting the whistle with a fork.

Allow the rice to cool completely

In a wide-bottomed pan, heat olive oil. Add grated ginger and finely chopped garlic. Saute for a minute

Add carrots. Saute for 2 minutes

Add capsicums and saute for 2-3 minutes till it softens

Add pepper powder and salt. Mix well.

Add the cooked rice to the veggies and mix well.

Switch off, close the lid and let it rest for atleast 5 minutes so the flavors will get absorbed in the rice.

Serve it immediately or pack it in a lunch box.
