Have you ever had food and said, "this the best thing I've ever eaten."
I find myself saying that phrase daily.
Papaya, though, may be the biggest trigger of that thought for me personally. Whether eaten plain or in heaping boats full of sweet and savory goodness, I'm crazy about Papaya. The fact that it may be one of the healthiest fruits aside, the taste is to die for.
I spent a brief amount of time working on a fruit farm in Hawaii, surrounded by Papaya trees, Banana trees, Star fruit and many other tropical fruit you never knew you loved. What's really more accurate is, "tropical fruit is the best thing I've ever eaten."
You're right, I was in heaven. But I was also in hell in a whole other way. Long story short, I ventured to Hawaii to learn how to sustainably farm and all of the intricacies of permaculture. When I arrived, it quickly became clear that I was working for a man who was not "in his right mind," if you will. I ended up working at the family fruit stand 70 hours a week and the only farming consisted of pulling weeds and harvesting sugarcane(which was awesome). I slept in an old abandoned outhouse next to a toilet and watched after 4 crazy toddlers, chopped coconuts, and entertained tourists most of the time, but when I wasn't, I was enjoying fresh tropical fruit.

Ingredients

  1. 1 cupquinoa
  2. 1.5 cupswater
  3. 1lemon
  4. 2pineapple " ring, diced
  5. 1papaya
  6. 1/2cinnamon stick
  7. 1/4 tspsea salt
  8. 1/4 cupparsley fresh leaves
  9. 1/4 cupcilantro fresh leaves

Cooking Instructions

    Optional* Soak Quinoa for 8 hours or overnight.

    Rinse Quinoa thoroughly under hot water. While rinsing, heat water with sea salt and cinnamon stick and bring to a boil. Once boiling add Quinoa and bring to a simmer, cook for 15 minutes. Remove from heat and allow water to be absorbed.

    Wash the Lemon and grate 1/2, set aside. Chop Lemon in half and juice it with a citrus squeezer or simply use your hands. Set aside.

    Dice Pineapple by first cutting two 1"discs off the top if the pineapple after you've chopped off the flower. Stack the discs on top of one another and chop the skin off as if you were cutting an octagon. Next, cut the Pineapple vertically, spacing 1" between each cut. Skip over the core, cutting just around it and removing it(save for smoothies!). Turn 90 Degrees and repeat, making perpendicular cuts to make square pineapple pieces. Set aside.

    Cut Papaya in half length wise. Remove about 75% of the seeds and save in a jar and lace in the fridge. Carve out the Papaya slightly to make more space for the filling.

    De-stem parsley and cilantro, set aside.

    Once the Quinoa has absorbed all of the water, remove cinnamon stick and add lemon juice and zest.

    Next, 75% of parsley and cilantro to the Quinoa.

    Finally, once the Quinoa has cooled down a bit, add the diced pineapple.

    Now stuff the filling into the papaya boats and garnish with the remaining herbs.
