Prepare carrots, lemons, limes and onions. Place in bottom of slow cooker. Next time i cook this, i will also make 6 tin foil balls at this point, prepare garlic heads and put in the bottom of the slow cooker along with foil balls.

Prepare beef stock, pour in slow cooker.

Cut 5mm deep gashes in lamb. Rub dried herbs, salt, pepper and oil into the gashes. Place in slow cooker. Next time i cook this, i will place lamb on top of tin foil balls

Cook for about 6 to 7 hours on high. The lamb should fall off the bone when its cooked when you try to lift it out. Next time I cook this, i will use 1 lemon, 1 lime and half a cup of beef stock and cook on low for 8-9 hours. *keep eye on fluid levels, it does get high, you may need to drain half of it out once or twice
