Ingredients

480 mins
  1. 1leg of lamb. (any roast lamb should work) 1-2 kg
  2. 2limes (cut in half)
  3. 3lemons (cut in half)
  4. 1 cupbeef stock
  5. 4onions (cut in half)
  6. 4carrots (cut into thirds)
  7. salt (1/2 to 1 tablespoon at a guess)
  8. 1 tablespoondried thyme
  9. 1 tablespoonolive oil
  10. 6large tin foil balls (will use next time due to fluid build up)
  11. 1 tablespoondried rosemary (will use next time)
  12. 2 headsgarlic (cut in half) (will use next time)
  13. Pepper (approx 1/2 teaspoon)

    Prepare carrots, lemons, limes and onions. Place in bottom of slow cooker. Next time i cook this, i will also make 6 tin foil balls at this point, prepare garlic heads and put in the bottom of the slow cooker along with foil balls.

    Prepare beef stock, pour in slow cooker.

  3. 3

    Cut 5mm deep gashes in lamb. Rub dried herbs, salt, pepper and oil into the gashes. Place in slow cooker. Next time i cook this, i will place lamb on top of tin foil balls

  4. 4

    Cook for about 6 to 7 hours on high. The lamb should fall off the bone when its cooked when you try to lift it out. Next time I cook this, i will use 1 lemon, 1 lime and half a cup of beef stock and cook on low for 8-9 hours. *keep eye on fluid levels, it does get high, you may need to drain half of it out once or twice
