If there's one dish guaranteed to be on every Indian restaurant menu, it's chicken tikka masala, which is composed of grilled chunks of chicken marinated in yogurt and spices in a creamy tomato cream sauce.
This tikka masala recipe is just like a restaurant quality meal (this version is with cream – I prefer the thicker version but I guess if you like to have it low fat make without). I yet recommend using cream as the sauce gets its full consistency). This recipe is perfect for a weekend dinner!
Before you get started, prepare a mix of Garam Masala mix as listed below. If you have less time you can use a canned tin of tomatoes. This will save you up to 30 minutes of your time...

Ingredients

4-portion
  1. 1 teaspooncinnamon ground
  2. 1 teaspooncoriander ground
  3. 1 teaspooncumin ground
  4. 1/2 teaspooncardamom ground
  5. 1/2 teaspoonnutmeg ground
  6. 1/2 teaspoonblack pepper ground
  7. 2 - 3 teaspoon teaspoonssalt
  8. 2 - 3 teaspoonspaprika
  9. 2 - 3boneless skinless chicken breasts pieces , diced into small cubes
  10. 3 Tbspsgaram masala spice (see above)
  11. 1/2 cupyogurt plain
  12. 1/2lemon a squeezed
  13. 1ginger small piece , peeled
  14. 3 clovesgarlic , peeled
  15. 1yellow onion
  16. 2 - 3boneless skinless chicken breasts pieces , diced into small cubes
  17. garam masala rest of remaining spice (see above)
  18. 1 1/2 Tbspsolive oil
  19. 1 Tbsptomato paste
  20. 3tomatoes ( 1 can peeled as alternative)
  21. 1 teaspoontomato paste
  22. Salt
  23. 1/2 cupcream low-fat
  24. 1/4 cupcilantro leaves
  25. basmati rice Cooked for serving

Steps

  1. 1

    In a large bowl with chicken add yogurt, lemon juice. Stir in 1/2 of garam masala spice (see above ingredients). Cover and refrigerate for 1 hour.

    Add oil to preheated pan. Cut chilli in small pieces and saute for a minute. Turn down to medium heat. Now add crushed garlic and ginger fry for 2 minutes till they turn slightly brown.

    Add the onion and sauté, stirring occasionally, until light brown and caramelized, about 5 minutes. Now add the rest of garam masala spice(see above) and mix well for 2-5 minutes.

    Add tomatoes and stir. Turn heat very low, stir occasionally, cook till tomatoes get mushy. Lastly add the teaspoon of tomato paste. (Patience here, can take up to 20-25 minutes of your time!)

    Now turn up heat and add marinated chicken, stir well. Cook from all sides for 5-8 minutes. Simmer on low heat until sauce thickens, about 20 minutes.

  6. 6

    The chicken should be cooked now and sauce will have thickened. Lastly add cream and stir well! Transfer to a serving platter, and garnish with fresh cilantro.
