  9. 1bay leaf
  10. 1carrot
  11. 1zucchini
  12. 1small eggplant
  13. 1onion
  14. 1green or red bell pepper
  15. 1tomato
  16. Other vegetables to taste (green beans, cauliflower, mushrooms...)
  17. 1 handfulalmonds and/or cashews
  18. 1 handfulraisins
  19. chopped fresh cilantro
  20. extra virgin olive oil

    Rinse the rice with cold water. Once rinsed, cook in plenty of water for 10 minutes with the bay leaf and salt. It should be slightly firm.

    Sauté half of the chopped onion. Add 1 clove, 8 cardamom seeds, 1 teaspoon of ginger, 1 teaspoon of cinnamon, 1 tablespoon of ground cilantro, 1 teaspoon of cumin.

    Add the large-cut vegetables, starting with those that take longer to cook: the remaining half onion, the bell pepper, carrot, zucchini, broccoli, cauliflower...) the raisins and sauté.

    Mix the vegetables with the rice, add a tablespoon of turmeric, the handful of almonds or cashews, and mix well. Adjust salt to taste. Sprinkle finely chopped cilantro.
