Ingredients

4-8 servings
  1. 1 cancannellini beans, rinsed and drained
  2. 1 cankidney beans, rinsed and drained
  3. 1 cangarbanzo beans, rinsed and drained
  4. 1/2Spanish onion, chopped fine (about 3/4 cup) soaked in water to take the edge off the onion
  5. 2celery stalks, chopped fine (about 1 cup)
  6. 1 cuploosely packed, fresh, finely chopped flat-leaf parsley
  7. 1 tspfresh chopped rosemary
  8. Dressing
  9. 1/3 cupapple cider vinegar
  10. 1/4 cupgranulated sugar (more or less to taste)
  11. 3 Tbspolive oil
  12. 1 1/2 tspsalt
  13. 1/4 tspblack pepper

Cooking Instructions

    In a large bowl, mix the 3 different types of beans, the celery, onion (drained), parsley and rosemary.

    In a separate small bowl, whisk together the vinegar, sugar, olive oil, salt and pepper. Add the dressing to the beans. Toss to coat.

    Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavour of the dressing.
