Ingredients

6-8 servings
  • 2 cansCannellini beans
  • 1 1/2 cupsdiced seeded tomatoes
  • 1 cupthinly sliced red onion
  • 1/2-1 tablespoonfinely chopped red chili
  • 1 cupgreen diced pepper
  • 4 clovesgarlic chopped
  • 2radish sliced thinly
  • Sea salt and black pepper
  • Dressing
  • 3 tablespoonsfresh lemon juice
  • 8 tablespoonsextra virgin olive oil

Steps

    Make the dressing by combining the lemon juice, olive oil, salt and pepper in a small container with a lid.

    Shake vigorously until combined and set aside.

  3. 3

    Drain the beans into a colander and rinse with cold water. Let sit for 5 minutes and then transfer to a bowl.

  4. 4

    Add the diced tomatoes, onion, chili, green pepper, garlic, radish and cilantro to the beans.

  5. 5

    Season well with salt and black pepper.

  6. 6

    Give the salad a few turns with a wooden spoon.

  7. 7

    Add some of the dressing and toss gently.

  8. 8

    Taste and add more dressing if you think it needs it and adjust the seasoning.

  9. 9

    Toss again and serve at once.
