Ingredients

8 servings

2x 400g cans cannellini beans, drained, rinsed
400 gcan chickpeas, drained, rinsed
400 gcan lentils, drained, rinsed
1/2 cupchopped fresh flat-leaf parsley leaves
1 tablespoonfinely chopped fresh chives
Dressing
2 teaspoonsfinely grated lemon rind
1 tablespoonlemon juice
2 tablespoonsolive oil
1small garlic clove, crushed

Steps

Combine beans, chickpeas, lentils, parsley and chives in a bowl.

Make dressing Place lemon rind, lemon juice, oil and garlic in a screw-top jar. Season with salt and pepper. Secure lid. Shake to combine.

Toss dressing through salad. Serve.
