Honey Chilli Cauliflower

My families favourite cuisine !!! 😁

Ingredients

  1. for crispy cauliflower
  2. 2cauliflower florets
  3. 1 1/2 cupmaida/Refined flour/cake flour
  4. 1/4 cupCorn flour
  5. Pinchsalt
  6. 1 Tbspoil
  7. nd oil for frying
  8. for coating
  9. few cloves of garlic finely chopped/ or garlic paste
  10. 1green chilli (if big),if small then 2,roughly chopped
  11. 1capsicum/green bell pepper u can use red nd yellow too,diced
  12. 1onion,diced
  13. mint leaves finely chopped (optional)
  14. few spoons of chili sause (acc to taste)
  15. 2 Tbsptomato ketchup or acc. to taste
  16. 2 tspsoya sauce
  17. 2 tspvinegar
  18. 2 Tbsphoney /
  19. just in case u dnt have add 1Tbsp sugar
  20. to tastesalt
  21. 1 tbspcournflour
  22. 1 cupwater
  23. coriander finely chopped
  24. 1 1/2 tspSesame seeds

Cooking Instructions

    Prepare cauliflower first

    Cut the cauliflower into bite size pieces.Take a pan, fill it half with water nd add a lil salt.Now put the cauliflower in this water nd leave for NOT more than 5 mins."DNT MAKE THEM SOFT, IT'S JUST TO CLEAN THE CAULIFLOWER PROPERLY ND MAKE IT LITTLE,VERY LITTLE TENDER."

    Now drain out the excess water from the pan nd wash cauliflower under running cold water.Remove it from under water nd leave it to dry for some time.

    Now heat oil (fill a lil less than half of ur frying pan with oil) in your frying pan for deep frying.In a bowl mix together cake flour, corn flour,salt nd oil (mix only 1 Tbsp of oil properly).Now put ur cauliflower in this dry mix nd coat ur cauliflower properly with this mixture.

    Now double fry the prepared cauliflower in small batches.1st Time- fry them on low heat nd remove from oil after 5 min.("DO NOT" fry them to golden brown in 1st round).2nd Time- fry them on high heat until golden brown.

    When you r done frying all the cauliflower keep them aside.

    For coating

    In a frying pan heat a lil oil (2 tbsp) add chopped garlic/paste and chopped green chilli.Saute for a min nd then add diced capsicum nd onion. DO NOT OVER COOK.Saute for 2 mins.

    Now mix together 1 tbsp cornflour in 1 cup of water nd add to the pan.To this quickly add chopped mint nd all the other ingredients like chilli sauce,ketchup,soya sauce, vinegar nd salt. DO NOT ADD HONEY AT THIS POINT.

    If u are using sugar then add that as well nd reduce the gravy to half.

    Now once the gravy has been reduced turn the heat off nd wait for a minute or so nd THEN ADD HONEY. Let cool for 5 to 10 mins nd then add cauliflower.

    If you are going to serve later thn add the cauliflower later before serving.

    DON'T EVER PUT CRUNCHY CAULIFLOWER IN VERY HOT COATING.It will become soggy.

    The cauliflower will remain crunchy for upto 2 hours.

    Now garnish with finely chopped coriander or sesame seeds nd enjoy 😍
