Ingredients

210 minutes
5 servings
  1. 5 pieceschicken
  2. 2medium tomatoes
  3. 2large potatoes
  4. 1large onion
  5. 1red bell pepper (or green, or yellow)
  6. 1 clovegarlic
  7. 2allspice berries
  8. 1 cubechicken and tomato bouillon
  9. 1 teaspoonfine herbs or thyme
  10. 1 canor bottle of dark beer (12 oz)
  11. as neededFlour
  12. as neededOil
  13. Salt and pepper

Cooking Instructions

210 minutes
  1. 1

Rinse the chicken under running water, pat dry with paper towels, and season with salt and pepper on both sides.

  2. 2

In a platter or bowl, spread a layer of flour, enough to coat the chicken pieces.

  3. 3

In a deep skillet, pour oil and heat over low heat. Add the chicken pieces and cook until they are slightly browned.

  4. 4

While the chicken is browning, slice the onion, cut the bell pepper into strips, slice the potatoes thickly, and chop the garlic. In a blender, place the halved tomatoes, add the chopped garlic and the chicken and tomato bouillon cube; blend to make a tomato paste.

  5. 5

Once the chicken is browned, remove it from the skillet and set aside. In the same oil (the chicken has released some fat), add the onion, sliced potatoes, and bell pepper strips. Stir gradually, and when the onion is slightly browned, add the tomato paste, allspice, and fine herbs, and bring to a boil. Turn off the heat.

  6. 6

Place the chicken in the slow cooker pot and add the sautéed mixture from the skillet, ensuring the chicken is covered.

  7. 7

    Pour the beer in slowly.

  8. 8

Cover the pot, plug it in, and set to high temperature.

  9. 9

After about 3 hours, you'll have delicious beer chicken that can be served with white rice.

  10. 10

Remember that in these pots, stirring is not necessary. If this will be the main dish, prepare it well in advance. The aroma is indescribable, and you can use light beer if you prefer. If you don't have a slow cooker, you can make it in a regular pot in about half an hour, but the flavor will vary.
