Place the pork ribs in a large, shallow, non-metallic dish. Mix the olive oil and spice mix, then rub it onto the meat. Cover and marinate in the fridge overnight.

Prepare the barbecue sauce. Put all the ingredients in a saucepan and heat gently until boiling. Simmer on low heat for 10 to 15 minutes until the sauce thickens slightly, then let it cool.

Remove the ribs from the dish, brush with olive oil, and cook for 10 minutes on each side on a medium-heat barbecue. Generously baste with barbecue sauce, then place the ribs on a rack set over a drip pan.

Cook for another 25 to 30 minutes on each side using the indirect cooking method, which means moving the charcoal to the sides so the fat doesn't drip onto it. Do the same with a gas or electric BBQ by not lighting the burner directly under the meat.

Cook the meat for another 25 minutes, basting often with the BBQ sauce, until the meat is tender.
