Ingredients

  • 1 cupLettuce
  • 1 cupSpinach
  • 1/2 cupIsagenix Cilantro Lime Rice
  • 1/4 cupBlack Beans
  • 5 ouncesslow-cooked shredded chicken (recipe below)
  • to tasteGuacamole and Salsa
  • 1Eziekel Tortilla optional
  • 1/4 cupBalsamic Vinegar
  • 2 TbspOlive Oil
  • 1 tspOregano
  • 1 tspBasil
  • 1 tspParsley
  • 1 tspDijon Mustard
  • 1/3 cupWater
  • 1/2 TbspChili Powder
  • 1 TbspMinced Garlic
  • 1 TbspCumin

Steps

  1. 1

    In a crock pot, add 2 lbs raw boneless skinless chicken breast or tenderloins. Add balsamic vinegar, olive oil, oregano, basil, parsley, Dijon mustard, water, chili powder, minced garlic, and cumin.

    Slow cook the ingredients for 5-6 hours on High in a crockpot.

  3. 3

    Fluff and tear with a fork to shred the chicken after cooking.

  4. 4

    Serve over cilantro lime rice, lettuce, spinach, black beans, and choice of guacamole or salsa. Eziekel Tortilla optional.
