In a crock pot, add 2 lbs raw boneless skinless chicken breast or tenderloins. Add balsamic vinegar, olive oil, oregano, basil, parsley, Dijon mustard, water, chili powder, minced garlic, and cumin.

Slow cook the ingredients for 5-6 hours on High in a crockpot.

Fluff and tear with a fork to shred the chicken after cooking.

Serve over cilantro lime rice, lettuce, spinach, black beans, and choice of guacamole or salsa. Eziekel Tortilla optional.
