Cajun Dirty Rice
Tons of flavor! This recipe substitutes bacon for the traditional liver as it's more readily available. I prefer to cook this rice risotto style so all the flavors can cook together.

Prep: dice onion, celery, carrots, bell pepper, and jalapeño and combine in a bowl

Chop bacon and sauté on high heat in the same pot you are planning to cook the rice

After it turns golden brown, remove bacon from pot and set aside. Then add all veggies to pot with the Cajun seasoning to sauté. Cook about 5-6 minutes or until veggies begin to slightly char

Being the heat down to medium. Add rice to pot and stir into the mixture. Begin adding chicken stock one cup at a time and continually stir, allowing the rice to absorb the liquid.

Continue adding liquid until the rice is cooked and all liquid has been absorbed. Do not over-add liquid.

Add bacon back in and stir completely. Serve solo or spoon a nice gumbo or etouffe on top.
