Ingredients

  1. Phyllo dough for the base
  2. 1.1 lbsflour (red) (about 500 grams)
  3. 3/4 cupolive oil (180 ml)
  4. 1 shotglass vinegar (about 1.5 oz or 45 ml)
  5. 1 pinchsalt
  6. as neededLukewarm water,
  7. For the filling
  8. 4.4 lbsspinach (about 2 kg)
  9. 1.1 lbsleeks (about 500 grams)
  10. Fresh green onions
  11. 1 bunchdill, finely chopped
  12. 1little olive oil
  13. Black pepper
  14. 14 ozfeta cheese (about 400 grams)

  1. 1

    Heat the olive oil in a large, deep skillet. Add the green onions, leeks, dill, spinach, and a little black pepper. Sauté lightly.

    Remove from heat and set aside to let the filling cool slightly.

  3. 3

    Grease a medium-sized baking pan with butter.

  4. 4

    Take 3/4 of the dough and roll it out to make a sheet for the bottom of the pan, making sure it covers the sides as well. Brush it with a little olive oil.

  5. 5

    Spread half of the filling over the dough, then crumble half of the feta cheese on top by hand.

  6. 6

    From the remaining dough, take a small piece, roll it out, and place it in the center of the pie.

  7. 7

    Add the rest of the filling and crumble the remaining feta cheese on top.

  8. 8

    Roll out the rest of the dough to make a top sheet and cover the pie.

  9. 9

    Brush with olive oil and butter, cut into pieces, and bake at 350°F (180°C) without convection for about one hour.
