Ingredients

6 servings
  • 6country sausages form Pelio, cut in medium pieces
  • 1large onion vertically cut in medium pieces
  • 4large green peppers cut in medium strips
  • 4large red peppers cut into medium strips
  • 2eggplants cut into pieces, degorged
  • 1/3 cupolive oil
  • 1 cupwhite wine
  • 3ripe tomatoes, ground
  • 1 cupvegetable stock
  • 1 tbsptomato paste
  • 1 tspsugar
  • 1chili pepper
  • 1 tsppepper
  • salt

Steps

  1. 1

    Sauté the sausages for a little while, add the onion, eggplant and peppers.

  2. 2

    Let till they brown and deglaze with the wine.

  3. 3

    Dissolve the paste in the vegetable stock.

  4. 4

    When the alcohol evaporates, add the tomato, the stock with the tomato paste, the sugar, the chili, the salt and pepper.

  5. 5

    Let it boil till all liquids are gone and the sauce thickens.
