Cooking Instructions

Sterilize a bin by boiling.

Wash limes. If they are waxed, then peel them and cut as you like.

Measure the gram of lime. Prepare the same amount of white rock sugar.

Place lime and sugar alternately in the bin.

Wait until all sugar gets melted. It takes whole day or longer.

Done! You can make cocktails at home with this lime syrup! Enjoy! (Ex. Vodka + soda + lime syrup = so good!)

Nothing says summer like the light citrus flavor of key lime pie! As we are quickly blowing through the summer season it occurred to me, I had not made a key lime pie all season. With thirty minutes to spare and not a single key lime in the house... I pulled together this delicious, gorgeous pie. The meringue is optional but gives such an improvement to the look of an otherwise lifeless looking pie. Also, I do not use food coloring (what's in that stuff anyway) but if synthetic and complicated chemical names are your thing you can green your pie up as you see fit. Regardless of pie color and meringue, this pie is a silky citrus filled treat for any occasion. I hope you enjoy.

I made this often with fresh key limes when we lived in California, where we had a tree full of them. Now they are hard to get so I use regular limes fresh juice is really the best flavor with either lime! It can be made in the traditional 10 inch pie pan or in 4 -3 inch tart pans as I made in the photo for 4 individual pies
