Ingredients

  • 4 tbsbutter
  • 1 cupdiced onion
  • 1/2 cupdiced celery
  • 2 tbsminced garlic
  • 1/4 cupflour
  • 2 cupshalf and half
  • 1 canchicken broth (for a thinner soup use 2)
  • 1 cupshredded carrots
  • 1 cupchopped fresh spinach
  • 1 cupchopped cooked chicken
  • 1 (16 oz)package of gnocchi
  • Salt & pepper

Steps

  1. 1

    Add butter to a large pot over medium heat saute onion, carrots, and celery until tender

  2. 2

    Add flour to create a roux, slowley add chicken broth and half and half until it starts to thicken

  3. 3

    Add sppinach, chicken, and gnocchi. Simmer 5- 10 minutes. Serve immediately.
