  2. 11/4 cupssugar
  3. 2 tspbaking powder
  4. 1 tbspncinnamon
  5. 2 cupsfinely grated carrots
  6. 1grated apple
  7. 1/2 cupdessicated coconut
  8. 1 cupveg. oil
  9. 3eggs
  10. 2 tspvanilla extract

  1. 1

    Mix flour baking powder, cinnamon and salt

  2. 2

    Mix in the grated carrots apple and coconut

  3. 3

    In a separate bowl mix the egg,oil and vanillla

  4. 4

    Stir in the flour mixture and bake at 180°C
