  • 2 cupsflour
  • 11/4 cupssugar
  • 2 tspbaking powder
  • 1 tbspncinnamon
  • 2 cupsfinely grated carrots
  • 1grated apple
  • 1/2 cupdessicated coconut
  • 1 cupveg. oil
  • 3eggs
  • 2 tspvanilla extract

Steps

  1. 1

    Mix flour baking powder, cinnamon and salt

  2. 2

    Mix in the grated carrots apple and coconut

  3. 3

    In a separate bowl mix the egg,oil and vanillla

  4. 4

    Stir in the flour mixture and bake at 180°C
