We take these on picnics as a change to the usual sandwiches. If you use salad tomatoes you don't even need cutlery, just eat them like an apple. Gorgeous!

Ingredients

  1. 4large beef tomatoes
  2. 150 gramscan of tuna
  3. 1small onion
  4. 4 tbspsweetcorn
  5. 3 tbspor to taste mayonnaise, my egg-free mayo recipe link below
  6. 1 tbsptomato ketchup
  7. 1 tbspfinely chopped parsley
  8. salt & pepper

Cooking Instructions

    Wash the tomatoes and cut off the tops to use as lids. Scoop out the core and seeds carefully with a spoon

    Salt the insides then place upsides down over kitchen paper to drain

    Spoon the tuna filling into the tomatoes, put the lids on and serve on a few lettuce leaves
