Potato & Eggs

This is one of the first things that I learned to make as a kid. Sunday nights, my pops would do the cooking and I always looked forward to it. He could make anything taste good. It was his gift. Big Daddy, as people called him, could make simple dishes such as this so tasty.
When I was about 4 years old, I remember standing on a chair in the kitchen, watching him cook. Every single Sunday, I would ask him if I could help, but he would say one day. For people that know me, they know that I am very persistent. I kept asking and asking and asking and asking. Finally, one Sunday, he showed me how to crack some eggs, add some spices, some milk, and how to beat the eggs. A simple task, but I felt as if I was helping.
From there, as the years passed, he would give me different things to do to help him cook. When people complimented his cooking, I felt as if they were complimenting me as well.
At around 17 years of age, I actually attempted to make this dish. To say it was different, is being nice. My pops said, "Good first attempt." A backhanded compliment, but it got me to make it better the next time.
The best compliment that I have received to date is when he told me that it was just as good as his. Best compliment ever.
This is a great Italian Sandwich. Simple, yet so tasty. Eggs, Potatoes, spices, and Boom!

Potato & Eggs

Peel and slice up into cubes the Potatoes

Preheat a sauce pan over medium heat. Add the olive oil and the garlic. Once the garlic is browned on both sides, remove the garlic and discard.

Crack the six eggs into a mixing bowl, stir in the milk, pepper, oregano, and basil. Beat the egg mixture until well blended. Cover the egg mixture and place into the refrigerator.

When the olive oil is hot enough, add the potatoes. Stir the potatoes.

Cook the potatoes for about 20-30 minutes, stirring every 5 to 10 minutes.

Once the potatoes are fork tender, add the egg mixture. Stir to coat the potatoes.

For the first 5 minutes, stir often to spread the egg mixture evenly over the potatoes. Once that is done, do not touch. Let it cook.

After 10-15 minutes, the dish is done.

But for me, I like to cook another 5 plus minutes. I love the burnt Potato and Eggs mixture that you have on the bottom. My favorite!

Serve on a hero/grinder roll, or in a pita.
