Cooking Instructions

In a large pan, heat water and cinnamon stick until boiling.

After cinnamon boils, add chocolate/abuelita and stir constantly until the chocolate has melted

Brown the flour until golden. Put into a bowl and add cup of milk. Stir/whip until there is no balls left in bowl

Or if you are using masa, no need for browning the flour. Just add the portion to the bowl and stir/whip with equal parts of milk as listed (2 cups)

After the flour is stirred with balls, add into the cinnamon/chocolate water

Constantly stir mix, then add the rest (1) cup of milk to water

Mix, add sugar, mix

Champorado is a sweet chocolate rice porridge that uses sweet glutinous rice (locally known as malagkit) and cocoa powder as main ingredients. A more traditional approach would be using tablea (pure cocoa blocks) instead of cocoa powder. A famous and common Filipino breakfast or afternoon snack also known as merienda.As a child, I loved waking up to weekend mornings with champorado on the table. It is sweet and savory and is best served with tuyo/dilis (salted dried fish) or pusit (dried squid). Some people use condensed milk pr even powdered milk but I prefer full cream or evaporated milk.
