Ingredients

  1. 1Whole red pepper cut in small pieces
  2. 1 bunchof Scallions chopped
  3. 1 pieceof Ginger mashed or use microplane
  4. 1Pack of your favorite beef hot dogs
  5. 1Whole Roasted chicken
  6. 4Eggs to scramble
  7. 5 tbspVegetable oil
  8. 8 tbspSoy Sauce
  9. 5 cupCooked white rice

Cooking Instructions

    Start by chopping hot dogs in 1/2 inch pieces. Put 3 tbsp of oil in a pan big enough to mix all ingredients. Cook on medium low for 5 min or until lightly brown. Remove hot dogs from pan and DoNot drain oil.

    Shred whole chicken off bones. Put to the side for later.

    Add about 3 tbsp of oil to same pan you cooked the hot dogs and add the white parts of the scallion, the mashed ginger (about 1 tbsp or to taste) and the chopped red pepper. Saut? for 3 to 5 minutes.

    Add the chicken and hot dogs and saut? for a couple of minutes more, until heated through.

    Whisk the eggs together with a pinch of salt and some ground pepper. Heat 2 tablespoons of oil in a wok or large frying pan. Cook eggs as you would for scrambled eggs and put to the side.

    Add the rice little by little stirring very well, green parts of the scallion, and the soy sauce, and cook, stirring, until well heated.

    Stir in scrambled eggs, mix well and serve. Enjoy.

    You can add more soy sauce or ginger if you wish. Also when adding soy sauce add little by little and stir well after adding so you can flavor to your liking. : )

This dish is similar to Eastern European or Asian Pilaf and or Risotto or Paella, where the rice is slow cooked for the rice to absorb the flavours. Well written and easy to follow instruction.
Well done.
My friends loved it .
It even works well with marinaded Tofu , that I added at a suitable time for myself :-)
