  1. 1 cupblack beans
  2. 1 cuppinto beans
  3. 1yellow onion; medium dice
  4. 1 bunchscallions; sliced on bias
  5. 1yellow bell pepper; medium dice
  6. 1red bell pepper; medium dice
  7. 4jalapenos; de-ribbed & small diced
  8. 2 clovegarlic; minced
  9. 1 bunchcilantro; chiffonade
  10. 1lime
  11. 1 tspcumin
  12. 1vegetable oil; as needed
  13. 1 pinchof salt and pepper

  1. 1

    Heat oil in a large saute pan. Sweat onions and peppers until nearly tender. Add garlic and beans. Season with dried spices. Toss. Sweat until fragrant. Add scallions, cilantro, and lime juice. Toss.
