Chicken Campagnola

There is this great little Italian Restaurant in the Irish section of the Bronx. A perfect place for me to frequent, considering my background. They have a lot of great dishes, but there is one dish that I love the most. It has potatoes, sausages, peppers, and chicken. All of my favorites ingredients in one dish.
Two weeks earlier, my family and I went there for my sister's birthday. Of course, I had this dish. After dinner on the ride home, I told my wife that I will make that dish. Not sure how, but I will do it.
I went to the store and blindly bought what I thought may be in the dish. Did I get the right stuff? Did I miss anything? Did I create a totally new dish? No idea, but to me, my version is way better. No offense to my favorite restaurant.
As always, this dish is open for interpretation. You can try it as is or fiddle around with it. It can be served over pasta or rice or even alone. It is up to you. #mycookbook

Cook sausages, however you prefer to cook them. Let them cool completely. I let them cool overnight in the refrigerator. When they are cool, slice them into half inch slices. Put to the side.

In a large pot over medium heat, add the olive oil, butter, garlic, pepper, oregano, and basil. Heat up until the garlic starts to brown slightly.

Add the chicken to the bottom. Stir to coat with the oil-butter mixture. Cook until the chicken is no longer pink.

Place the potatoes into the pot. Stir to mix together. Cook for about 10-15 minutes.

Get the peppers into the pot. Stir to combine everything together. Cook together for 10 minutes, stirring occasionally.

Add the sausages to the mix, stirring together as you add them.

Once the sausages are added, pour the chicken stock into the pot. Cook for another 10-15 minutes, until slightly boiling.
