I chose orange colored bell pepper for a couple of reasons. First they were the ones I had. Secondly it's Autumn.
Steps

Roast the peppers on open flame or roast in broiler till the peppers are blackened all over.

Put into a paper bag ten minutes.

Then peel remove seeds and chop them up.

Sauté the onion and garlic in the oil, till the onion is tender.

Add everything to a blender and puree till smooth.

Taste and adjust the seasonings to taste.
