In a heavil small skillet, add the olive oil, garlic, green pepper, onion and thyme and cook till wilted

Pour the vinegar and when it starting to boil, set aside ,cover and wait for 20 minutes. Salt to taste

In a shallow salad plate,arrange the timatoes, pour the escabeche on top and serve.
