Ingredients

  1. 1/2 mediumonion, chopped
  2. 1 tbspbutter
  3. 1 clovegarlic
  4. 10 ozspinach
  5. 2 tbspall-purpose flour
  6. 1 cupskim milk
  7. 1salt
  8. 1/4 tspcayenne pepper
  9. 1/4 cupparmesan cheese

Cooking Instructions

    Place spinach in large pot of boiling water for 1 minute then remove to ice water. Chop when cool.

    Sautee crushed garlic and onion in butter on med-high until soft.

    Wisk in flour with salt and cayenne pepper to taste to form a paste then slowly add milk. Wisk until thickened.

    Add in parmesan cheese and spinach.

    Serve warm.
