Ingredients

  • 2 cupDry Lentils, Red
  • 15 ozCanned Diced Tomatos
  • 1/2 packagesFresh Spinnach
  • 4 cupChicken Broth
  • 1 smallOnion, Diced
  • 1 tbspGinger
  • 1 tbspGarlic, Minced
  • 1 tbspCurry Powder
  • 1 tspMustard Seed
  • 1/2 tspGround Cumin
  • 1/2 tspGround Coriander
  • 1/4 tspCayenne Pepper
  • 1 tbspSalt

Steps

  1. 1

    Combine all ingredients in a slow cooker.

  2. 2

    Cook until thick and creamy and lentil are soft, about 3 hours on high or 6 hours on low.

  3. 3

    Season to taste with more salt and pepper, if desired.

  4. 4

    Can add 2 tsp fresh lemon juice and 1/3 cup fresh cilantro. Yields about 1 cup per serving.
