As with anything I make, this was born of necessity. I go to the market Mondays and I had scraps of things to use up. The result is something beautiful that we will enjoy as leftovers for the next couple days :)

As with anything I make, this was born of necessity. I go to the market Mondays and I had scraps of things to use up. The result is something beautiful that we will enjoy as leftovers for the next couple days :)

In a medium sauce pan bring chicken broth to a boil, add rice, reduce heat to low and cover.

Add butter to frying pan and lightly brown onion without burning the butter. Add seasoning to taste.

Rice should be done after 20 minutes. Fluff with a fork and add browned onion.

Brown the edges of your bell peppers on high heat and add to rice.

Add coarsely chopped fresh parsley to rice and mix well.

Serve warm with dinner or allow to cool and serve as a salad.
