Ingredients

Serves 4 servings
  1. 4large cans tuna (I used tuna in water)
  2. 1/3 cupchopped onion, plus 1/2 onion thinly sliced
  3. 2 clovesgarlic
  4. 1 bunchfresh cilantro, cleaned and finely chopped
  5. 1 lbcorn tortillas (about 1/2 kilo)
  6. 1/2 headlettuce, cleaned, disinfected, and finely chopped
  7. 1 cupsour cream
  8. 1 cupcrumbled queso fresco
  9. 1 cupvegetable oil
  10. Salsas of your choice: red, green, or taco sauce
  11. 2 cupsrefried beans
  12. Salt, to taste

Steps

    Drain the cans of tuna very well. Set aside.

  2. 2

    In a hot skillet, add the oil and sauté the chopped onion until golden. Add the garlic and cook for a few minutes. Add the tuna and cilantro, season with salt, and cook until the mixture is dry.

    Once the tuna mixture has cooled slightly, fill the tortillas and roll them up tightly to make taquitos.

    In another skillet, heat enough oil for deep frying. Fry the flautas until golden and crispy.

    Remove the flautas and place them on paper towels to drain excess oil.

    Serve the cheese, sour cream, lettuce, salsas, and refried beans in small bowls. Let everyone assemble their flautas as they like.

    Tip: I use a toothpick to hold two flautas together—it makes frying easier.
