I got distracted taking the photo and they were already eating them. Flautas are those crispy rolled tacos you can fill with whatever you like. At home, well, they never last long.

Drain the cans of tuna very well. Set aside.

In a hot skillet, add the oil and sauté the chopped onion until golden. Add the garlic and cook for a few minutes. Add the tuna and cilantro, season with salt, and cook until the mixture is dry.

Once the tuna mixture has cooled slightly, fill the tortillas and roll them up tightly to make taquitos.

In another skillet, heat enough oil for deep frying. Fry the flautas until golden and crispy.

Remove the flautas and place them on paper towels to drain excess oil.

Serve the cheese, sour cream, lettuce, salsas, and refried beans in small bowls. Let everyone assemble their flautas as they like.

Tip: I use a toothpick to hold two flautas together—it makes frying easier.
