Preheat oven to 180°Cor gas 7

Slice the pork tenderloin into diagonal thickish slices

Melt the half of butter in a heavy skillet/ fry pan, add the white pepper and salt. Fry for a second then add the pork sear the pork on both sides

After 10 mins add the rest of the butter, rosemary, onions

Then after 2 mins, add the chicken broth and mango. Transfer to oven dish and bake for 15 minutes

Take it out of the oven, put in a serving dish and garnish with some thinly sliced onion. Serve with veg or lovely thick chips and a sweet dip.
