Ingredients

4 servings
  1. 180 gramsasparagus spears, trimmed
  2. salt
  3. 180 gramscooked prawns
  4. 8 tspFrench Dressing, see link below for my recipe
  5. 12Baby Gem (small Romaine / Cos) lettuce leaves
  6. 8cherry tomatoes, quartered
  7. 1 pinchcayenne pepper

Cooking Instructions

  1. 1

    Put the asparagus into a saucepan, cover with boiling water and add a good pinch of salt

  2. 2

    Boil for 4 minutes or until tender

  3. 3

    Drain and then fill the pan with cold water. Let the asparagus cool then drain again

  4. 4

    Mix together the French Dressing and cayenne (paprika is also nice)

  5. 5

    Line the serving plates with 3 baby gem leaves

  6. 6

    Divide the asparagus and prawns between the plates then spoon 2 teaspoons of dressing over each serving
