A lightly dressed prawn salad
Cooking Instructions

Put the asparagus into a saucepan, cover with boiling water and add a good pinch of salt

Boil for 4 minutes or until tender
- 3
Drain and then fill the pan with cold water. Let the asparagus cool then drain again
- 4
Mix together the French Dressing and cayenne (paprika is also nice)
- 5
Line the serving plates with 3 baby gem leaves
- 6
Divide the asparagus and prawns between the plates then spoon 2 teaspoons of dressing over each serving

A lovely fresh summer dish full of goodness! Aduki beans may be labelled as Adzuki or Azuki beans or Oriental Red Beans. I used Essential Organics brand. They come tinned or dry. If using dry you need to soak them overnight before using. They're quite sweet and great in salads. In Asia they're mashed and used as filling for dessert dumplings.
