Ingredients

  1. 1 lbGround pork, unseasoned
  2. 1 lbGround lamb
  3. 1 tbspSalt
  4. 1 tspOregano
  5. 1 tspGround corriander
  6. 1 tspFennel seed
  7. 4 cloveGarlic, minced (about 1 Tablespoon)
  8. 1/2 tspFresh ground black pepper
  9. 1/4 tspCayenne pepper
  10. 2 eachZest of 2 oranges, finely grated
  11. 1/4 cupIce water

Cooking Instructions

    Place pork and lamb in a large mixing bowl.

    Mix all spices well.

  3. 3

    Add spices and water to the meat and mix well with hands.

  4. 4

    Refrigerate for an hour or more for flavors to blend. (Can be made the night before)

  5. 5

    Portion into 16 - 2 ounce portions and flatten into round disks.

  6. 6

    Fry in a hot skillet until you have a dark brown on each side. About 3 minutes per side.

    Drain on paper toweling before serving.
