Saganaki with Country Sausage, Eggs, and Graviera Cheese

A unique saganaki with country sausage! It's one of the best appetizers to enjoy with wine or a cold beer. Serve it hot with plenty of bread.

A unique saganaki with country sausage! It's one of the best appetizers to enjoy with wine or a cold beer. Serve it hot with plenty of bread.
Cooking Instructions

Wash and slice the peppers and cherry tomatoes.

Slice the sausage.
- 3
Place an oven-safe dish on the stove over medium heat. Add the olive oil and sliced sausage, and sauté.

Add the peppers to the sautéed sausage and stir. Add the cherry tomatoes and stir to sauté everything together.

Add the tomato sauce along with 3 tablespoons of water. Simmer for about 2 to 3 minutes, then remove the dish from the heat.

Cube the graviera cheese and add it on top of the sautéed mixture.

Crack 2 eggs and place them whole on top of the graviera cheese.

Place the saganaki in a preheated oven at 350°F until the eggs are slightly cooked and the sauce thickens. When ready, sprinkle with parsley, salt, and freshly ground pepper. Enjoy with fresh bread and a cold beer!

This morning I went walking with Charlie and a lovely friend/neighbor of mine. It has been a while since we saw each other so this gave us the opportunity to catch up on things. The weather has been sunny and so much cooler which I am very grateful for and so is Charlie. :) As she was telling me what was happening in her life, I told her about mine and I also mentioned to her, and this is a bit of exciting news, I have been invited to do a small cooking workshop in August for children from the age of 4 - 11. This sounded like so much fun that of course I said YES!! :) I have already decided what I will make and what's great about it is that they will be able to take part helping out. :)When I returned from our walk I had taken out the ingredients to make this excellent tasting appetiser. I have already posted a few salad recipes so it was time to make something else for today :) Oh! but I will be posting another salad recipe this coming Friday. hahaha The first time I tried this it was in a beautiful mountain area in Greece called Arachova, it is just under an hour drive outside of Athens, with breathtaking views, fresh air, ski slopes, and taverns that have the most delicious appetisers, and this is one of them. In my recipe I have added a bit more vegetable oil because I love to dip fresh bread into the sauce, it has a smokey, spicy taste to it that you just can not get enough of. :) Foodzesty -

You can eat more healthy and still attain great flavors. Italian style turkey sausages keep the calories at bay. The sage which is optional really accents these sausages. I thought I'd never have ring liver sausage again. It had gone extinct around here for a while. Probably my favorite breakfast of all time. But, I found a decidedly good version in "Dietz & Watson's Liver Ring Sausage" at one of the last local small town grocery stores, the spice and everything is more pronounced than the old time stuff I used to get, but very good. Only difference is, they are selling it specialty, $8.95 for a ring, it used to be ubiquitous liver sausage for cheap. Last time I bought it years ago, it was less than $3. Hell, even the eggs and bread are expensive. This is what my family ate back in the day when we didn't have any money and times were tough. Amazing how things change. Devilsnew -

This traditional Greek recipe has been around for ages and ages, and I have been making this for as long as I can remember, but I only knew the main ingredients this recipe called for. So, a couple of weeks ago I was watching another cooking show and it seems that they have added a new ingredient, Yogurt. I thought to myself what a delicious idea adding yogurt it will absolutely give it a bit of a twist, and so I bookmarked the recipe to make at a later date.I headed into the kitchen this morning, and had to see for myself if the taste is as good with the yogurt. I almost always have yogurt in the refrigerator, eggs, tomatoes, hmmm had all the necessary ingredients and was ready to get started on the recipe. Dont know why, but this 5 minute breakfast meal is called a Bouncer in our family.Slice of pan heated rye bread or sour dough or other farm baked bread, croissant, thick slice of cheese on top of the warm bread to melt, fried slices of kielbasa sausage on the cheese, fried egg on top.
