Ingredients

  1. 2country sausages, sliced (about 10 1/2 oz)
  2. 1red bell pepper, sliced into rings
  3. 2-3small green bell peppers, sliced into rings
  4. 10cherry tomatoes, halved
  5. 1 cuptomato sauce (about 7 oz), preferably homemade
  6. 5 1/3 ozgraviera cheese, cubed
  7. 2eggs
  8. Salt, pepper, parsley
  9. 1 tablespoonolive oil

Cooking Instructions

    Wash and slice the peppers and cherry tomatoes.

    Slice the sausage.

    Place an oven-safe dish on the stove over medium heat. Add the olive oil and sliced sausage, and sauté.

    Add the peppers to the sautéed sausage and stir. Add the cherry tomatoes and stir to sauté everything together.

    Add the tomato sauce along with 3 tablespoons of water. Simmer for about 2 to 3 minutes, then remove the dish from the heat.

    Cube the graviera cheese and add it on top of the sautéed mixture.

    Crack 2 eggs and place them whole on top of the graviera cheese.

    Place the saganaki in a preheated oven at 350°F until the eggs are slightly cooked and the sauce thickens. When ready, sprinkle with parsley, salt, and freshly ground pepper. Enjoy with fresh bread and a cold beer!
