Southwestern Pasta with Chicken

We get wellness newsletters at my office and this month's had great healthy recipes. This is one I tweaked a little to work for our tastes. And for us it is more like 4 servings! :)

Ingredients

8 servings
  1. 2 cupuncooked whole wheat rigatoni
  2. 1 lbboneless skinless chicken breasts cubed
  3. 1 cupsalsa
  4. 2 1/2 cupunsalted tomato sauce
  5. 1/4 tspgarlic powder
  6. 2 tspcumin
  7. 1 tspchili powder
  8. 1 cupcanned black beans rinsed and drained
  9. 1 cupcanned corn
  10. 1/2 cupshredded 2% Colby Jack cheese

Cooking Instructions

    Fill a pot with water and bring to a boil.

    Cook pasta until al dente about 10-12 minutes, or according to the package directions. Drain well.

    Spray a 12 inch skillet with cooking spray. Saute chicken over medium heat until opaque, about 7-10 minutes.

    Stir in the salsa, tomato sauce, garlic powder, cumin, chili powder, black beans, and corn.

    Stir thoroughly and cook until heated through. Add the pasta and gently toss to mix evenly.

    Evenly sprinkle cheese over the pasta before serving. I put the cheese on before serving so it would melt a bit, but you can add cheese to each individual portion. Roughly 2 tablespoons cheese per serving.
