Southwestern Pasta with Chicken
We get wellness newsletters at my office and this month's had great healthy recipes. This is one I tweaked a little to work for our tastes. And for us it is more like 4 servings! :)
Cooking Instructions
- 1
Fill a pot with water and bring to a boil.
- 2
Cook pasta until al dente about 10-12 minutes, or according to the package directions. Drain well.
- 3
Spray a 12 inch skillet with cooking spray. Saute chicken over medium heat until opaque, about 7-10 minutes.
- 4
Stir in the salsa, tomato sauce, garlic powder, cumin, chili powder, black beans, and corn.
- 5
Stir thoroughly and cook until heated through. Add the pasta and gently toss to mix evenly.
- 6
Evenly sprinkle cheese over the pasta before serving. I put the cheese on before serving so it would melt a bit, but you can add cheese to each individual portion. Roughly 2 tablespoons cheese per serving.

Cajun Chicken over Pasta Cajun Chicken over Pasta
This chicken is a family favourite. We often prepare a double or triple batch of the spice mixture ahead of time and store it in an airtight container. It is a spicy dish, but you can reduce the amount of cayenne pepper in the spice mixture if you prefer. The chicken is also good served on its own as chicken strips.ingridbagnariol

Creamy Chicken Pasta Creamy Chicken Pasta
Time for a hearty dinner that the whole family will love! (Well, provided your kids like mushrooms). 🍄 🤷♀️I kept this recipe fairly simple, but it can easily be modified if you like to experiment. Want spicy? Add some crushed red pepper or cayenne pepper! Don’t like mushrooms? Leave them out! Maybe add some spinach instead. You do you!#GlobalApron Week 7 Milk#Dinner #Savory #Dairy #Cheesy Chris Gan -

Made in one pot, this easy weeknight dinner uses the right amount of liquid to made a sauce as the noodles cook in it. I used my taco seasoning (recipe is up too) but a packet of store-bought Taco seasoning would work too. Lance Wilson -
