Ingredients

  1. 4-5small green baingan
  2. 2-3green or red tomatoes
  3. 2onion
  4. 2cleaned shenga(drumstic)
  5. 2medium potatoes
  6. 2 tablespoonCoarsely grinded ginger garlic chilli and coriander
  7. 2 teaspoon Red chilli powder
  8. 2 tablespoonmalvani masala
  9. 2 tablespoondhanajeera powder
  10. 1 tspdried curry leaves powder
  11. rai
  12. jeera
  13. haldi
  14. Hing
  15. to tasteSalt
  16. as neededOil

Steps

  1. 1

    In a pan add oil then rai and jeera when crackles add dried curry leaves powder saute

  2. 2

    Add coarsely grounded green masala saute with little haldi and salt

  3. 3

    Add chopped onions and stirr continuesly. Cover and cook 4-5 mins later add onion and stirr then add all dry masalas stirr continuesly and cover.

  4. 4

    When it oil separates add tomatoes and stirr 2-3 mins later add potatoes and shenga (drumstic) mix well and cover to cook. Till all veggies get done.

  5. 5

    Later Add little jaggery and salt nwater and cook for 2-3 mins. add lemon juice also.

  6. 6

    Remove when it all mixed well.

  7. 7

    For smoke.

  8. 8

    Take one Kayla and put over flame. Place this burnt koyla in small plate and place this in the middle of bhaji and pour little oil over it. Cover and let the smoke spread.. Remove plate after 1 min.
