Ingredients

  • 1 1/4 cupsall-purpose flour (150 grams)
  • 1/2 cupsugar (100 grams)
  • 4ripe bananas
  • 2large eggs, at room temperature
  • 3 1/2 tablespoonsmargarine (50 grams)
  • 1 tablespoonvegetable oil
  • 1 tablespoonbaking powder
  • Vanilla extract and ground cinnamon, to taste

Steps

  1. 1

    Peel the bananas and mash them with a utensil. Set aside.

  2. 2

    In another bowl, combine the margarine, sugar, and vegetable oil. Mix until well combined.

  3. 3

    Add one egg and beat, then add the second egg and beat again.

  4. 4

    Sift the dry ingredients—flour, baking powder, and cinnamon—over the mixture. Mix well.

  5. 5

    Add the mashed bananas and vanilla extract to taste. Mix briefly (I like to leave some banana chunks, but you can mix until smooth if you prefer).

  6. 6

    Pour the batter into a prepared baking pan and bake in a preheated oven at 350°F (180°C) for about 30 minutes, or until a knife or toothpick inserted in the center comes out clean.
