Fajitas Your Way

One of my favorite meals as a student was Mexican fajitas. With just a few basic ingredients, you can have a quick, nutritious, and colorful meal! In this recipe, I use shrimp (shrimp fajitas), but you can substitute with chicken or beef if you prefer. As the title suggests, make the fajitas the way you like them.
Fajitas Your Way
One of my favorite meals as a student was Mexican fajitas. With just a few basic ingredients, you can have a quick, nutritious, and colorful meal! In this recipe, I use shrimp (shrimp fajitas), but you can substitute with chicken or beef if you prefer. As the title suggests, make the fajitas the way you like them.

Heat the oil in a pan over medium-high heat. Add the shrimp (or chicken or beef if chosen) and sauté for 5 minutes until they are seared and change color, stirring once.

Remove the shrimp from the pan and in the same pan, sauté the onions and peppers for 5 minutes just until they soften a bit.

Add the shrimp back to the pan, add the fajita mix and half a cup of water. Once it comes to a boil, reduce the heat and simmer for 5 minutes, stirring occasionally. Note: If using chicken, let it cook for 10 minutes.

Warm each fajita wrap for 10 seconds in a non-stick pan (turning only once).

In each wrap, place 1-2 tablespoons of the shrimp-onion-pepper mixture in the center, then fold from both sides and the back.

Serve with rice or tortilla chips for a delicious Mexican meal!
