Ingredients

4 servings
  1. 1 cupuncooked rice (white or brown)
  2. 1 1/2 tspItalian vinegar and oil salad dressing
  3. 1 1/2 tspwater
  4. 5 tbspvegetable/olive oil
  5. 3 tbspvinegar (whatever kind you choose)
  6. 1 tbspsoy sauce (I used reduced sodium)
  7. 1/2 tspsugar (optional)
  8. 1(8 ounce) bag baby spinach leaves
  9. 1 cupchopped celery
  10. 1/2 cupsliced green onions (1 bunch) (I'm not a fan of green onions, so I use white onions chopped to taste instead)
  11. 1 1/2 cupchopped green olives
  12. 12 slicebacon, cooked and crumbled

Steps

  1. 1

    Cook the rice according to the package directions.

  2. 2

    In a medium serving bowl, combine the Italian vinegar and oil with the water and let stand for 5 minutes.

  3. 3

    Add the oil, vinegar, soy sauce and sugar (if using) and mix well.

  4. 4

    When the rice is done, let cool for 5 to 10 minutes and then add to the bowl with the dressing.

  5. 5

    Mix well.

  6. 6

    Cover and refrigerate until ready to serve.

  7. 7

    Just before serving, stir in the spinach, celery, onions, olives and bacon.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
