Pimento Fried Pork
It's always better with fresher cuts of meat. Always good.
Steps

Marinade the pork in the pimento paste and salt the night before cooking.

In a large pot heat the lard on a medium heat.

Add the pork and cook for about 20-25 minutes or until cooked through.

Onced cooked you can serve with rice. I normally just have it with some bread.

Let the pork cool down completely, then transfer everything in pot including the lard into an air tight container.

Store in the fridge for up to 7 days. You can have small amounts as a snack.
