Ingredients

12 servings
  1. 2 cupCooked Rice
  2. 1 lbGround Beef
  3. 1 tbspOlive Oil
  4. 2 largeGreen Peppers (chopped)
  5. 1/2 cupDiced Onion
  6. 29 ozCan Diced Tomatoes (drained)
  7. 3(14oz) Cans Tomato Sauce
  8. 2(14oz) Cans Corn (drained)
  9. 1/2 tspGarlic Powder
  10. 1/2 tspKosher Salt
  11. 1/2 tspFresh Ground Black Pepper
  12. 2 cupShredded Cheddar Cheese

Steps

  1. 1

    Brown ground beef in a large stock pot, drain, remove from pan and set aside.

  2. 2

    Heat oil in stock pot on medium high heat and add green peppers and onion. Saute 5-10 minutes or until softened, stirring occasionally.

  3. 3

    To stock pot, add tomatoes, sauce, corn, garlic powder, salt, and pepper. Bring to a boil, then reduce heat and simmer 5 minutes. Stir in rice and ground beef.

  4. 4

    Pour into a 9x13 baking dish. Top with shredded cheese. Bake at 350 for 12-15 minutes or until cheese is melted.
