Ingredients

  1. 2 lbground beef, turkey or chicken
  2. 1 cupsliced black olives
  3. 4marinated artichoke hearts (reserve 1/4 cup of marinade oil)
  4. 4 ozsundried tomatoes
  5. 6 ozfeta cheese, crumbled
  6. 2eggs
  7. 1 1/2 cupseasoned bread crumbs
  8. 2 tbspminced garlic
  9. 1Non-stick vegetable spray for the cooking dish
  10. Coarsely ground black pepper
  11. bottled balsamic vinnaigrette dressing
  12. 1/2 cupgrated parmesan cheese

    Preheat oven to 350°F.

  2. 2

    Coarsely chop the artichoke hearts.

  3. 3

    Mix all ingredients by hand in large bowl. Be sure to add at least 1/4 cup of the artichoke marinating oil - this adds a wonderful flavor.

  4. 4

    Spray large casserole dish with non-stick cooking spray and form meatloaf in the dish.

  5. 5

    If desired, cut a 1/2-inch deep slice in the center of the top beginning and ending 1 inch from the ends and drizzle balsamic vinaigrette dressing.

  6. 6

    Sprinkle the top liberally with the parmesan cheese.

  7. 7

    Bake for 50 minutes at 350°F.

  8. 8

    Remove from oven and let rest for 5 minutes before serving.
