We grew up on this as a delicious warm salad or side to freshly caught and cooked and oatmeal-breaded herring. Reminds me of being sat around the kitchen table when we were young

Ingredients

  1. 10waxy potatoes
  2. 115 gramspeas
  3. 115 gramscooked beets, diced
  4. 2 tspfinely chopped onion
  5. 1 tspfinely chopped parsley plus extra for garnish
  6. salt & pepper
  7. 4 tbspVickys Eggless Mayo, see my recipe list for this

Cooking Instructions

    Dice the potatoes and boil in salted water for 10 minutes until tender, then drain and pat dry

    Simmer the peas in another pan for 5 minutes or until cooked

  3. 3

    While the peas and potatoes are still warm, mix them together gently in a bowl with the chopped beets, onion and parsley
